2 Easy And Delicious Vegan Chocolate Recipes

Thankfully, many companies have now begun making vegan chocolate, and if you follow a plant-based diet, you have your choice of chocolate bars and squares to enjoy. But the selection of more specialized vegan chocolate treats is still not very large. So, it can be helpful to know how to make your own using vegan chocolate and other ingredients. Here are two easy recipes for delicious, vegan chocolate treats.

Chocolate Peanut Butter Cups

Traditional peanut butter cups are often made with milk-based ingredients, so they are not vegan. This is an alternative vegan version that is every bit as tasty. They're also lower in sugar than most store-bought peanut butter cups, so you don't have to feel as guilty for enjoying them. You'll need:

  • 1 cup vegan chocolate chips, or vegan chocolate chopped into chunks
  • 1/3 cup all-natural peanut butter
  • 3 tablespoons confectioner's sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

​Combine the peanut butter, confectioner's sugar, salt, and vanilla extract. These ingredients should come together to form a firm paste. Divide the paste into 12 even portions, and shape each portion into a ball. Flatten each ball slightly, and set them aside.

Melt the vegan chocolate in a double boiler. Once it is fully melted, drop one spoonful into each of the 12 mini muffin tins. Then, place a ball of the peanut butter mixture in each tin. Press it down a little so chocolate oozes up the sides. Drizzle a little more chocolate on each one to completely cover the peanut butter. Let your peanut butter cups harden in the fridge, and then pop them out of the muffin tins. Enjoy!

Vegan Chocolate Bark

Chocolate bark is so easy to make. You can also substitute any of your own favorite mix-ins as desired. You'll need:

  • 1 cup vegan chocolate chips or chopped vegan chocolate
  • 1/4 teaspoon coconut oil
  • 1/4 cup raisins
  • 1/4 cup almonds
  • 1/4 cup peanuts

Melt the chocolate in a double boiler. Stir in the coconut oil and continue heating for another minute. Then, remove the chocolate from the heat and stir in the raisins, peanuts, and almonds. Spread this mixture out on a sheet pan that has been lined with wax paper. Place it in the fridge to solidify, and then break it into several rough pieces. Enjoy!
